Mango Marshmallow

- 20 g egg whites

- 50 g sugar (for the syrup)
- 65 g mango purée

- 8 g glucose syrup

ReduceReduce — To cook down until some of the moisture has evaporated. the mango purée slightly. About 70–80% of the original weight should remain.

For the syrup, combine the water, mango purée, glucose syrup, sugar for the syrup, and agar-agar in a saucepan.

Chef's tip:
First, mix the sugar with the agar-agar in a separate bowl. This helps distribute the agar-agar evenly without forming lumps.

Bring the syrup to a boil and cook for 5 minutes.
Chef's tip:
Stir the syrup constantly, otherwise a crust will form on the bottom due to uneven heating.

While the syrup is cooking, begin whipping the egg whites with the sugar for the meringueMeringue — Egg whites whipped with sugar until light, airy, and stable.. Pour the syrup into the meringue in a thin stream while continuing to whip at the mixer’s highest speed for a few more minutes.

Transfer the finished mixture into a piping bag fitted with your favorite nozzle and pipe the marshmallows onto parchment paper.
Chef's tip:
Do not get distracted while piping the marshmallows—the mixture begins to set within a few minutes. Work quickly and carefully.

Leave the marshmallows to stabilize for 4–8 hours.
Plating
Once the marshmallows have completely set, dust them with a mixture of powdered sugar and starch (3 to 1), or dip them in melted or tempered chocolate. Enjoy your marshmallows!
