- Vegetarian
- Dairy-free
- 50 g flour
- 25 g cold butter
- 12 g sugar
- 10 g egg
- ¼ g salt
- 8 g walnuts
- 125 g peaches
Ingredients
- 50 g flour
- 25 g cold butter
- 12 g sugar
- 10 g egg
- ¼ g salt
- 8 g walnuts
- 125 g peaches
Chef's tip:
One classic-size galette equals 4 servings.
Method
- 1
For the dough, combine the flour, sugar, salt, egg and cold butter in a separate bowl.
- 2
Mix the dough. It should turn out soft and smooth.

Chef's tip:
To make the dough in a matter of seconds, I use a hand blender with an attachment with large blades. Simply load all the ingredients and blend them together.
- 3
Wrap the dough in food foil and leave it in the refrigerator for 30-60 minutes.
- 4
While the dough is cooling, cut the peaches into 5mm slices.

- 5
Coarsely chop the walnuts.
- 6
When the dough has cooled, roll it out to a thickness of about 5mm. Place the sliced peaches on top, leaving 3-4cm of free space around the edges. Sprinkle the peaches with walnuts.
Chef's tip:
If your peaches are not very ripe or sweet, sprinkle the galette with a little sugar.

- 7
Fold the edges of the galette, as in the photo.
- 8
Bake the galette for 20-25 minutes in an oven preheated to 180°.
Plating
Serve the galette chilled or warm. One of the best ways to serve peach galette: with vanilla ice cream. Enjoy!
